Ingredients
1 jar Here's
to the Cook! Vodka Sauce
2 tablespoons olive oil
2 large garlic cloves, minced or pressed
2 pounds frozen chopped spinach
1 teaspoon dry basil
½
cup mozzarella cheese
½ cup Parmesan cheese
1½ cup ricotta cheese
½ teaspoon nutmeg
1 pound dried manicotti shells

Cooking
Steps
Heat
olive oil in large sauce pan and saute garlic. Add spinach and basil.
Drain if necessary and let cool. Add cheeses, nutmeg
and salt and pepper to taste.
Cook pasta shells in boiling water until al dente (for approximately
8 to 10 minutes). Drain well. Fill each manicotti with spinach and
cheese mixture and place in a lightly oiled 9X12 inch baking dish.
Pour half of Vodka Sauce evenly over noodles and cover tightly with
foil.
Bake manicotti at 350 degrees for 30 minutes. Heat remaining Vodka
Sauce in another sauce pan and pour in a serving dish. Serve manicotti
hot and pass remaining sauce at the table.
