raspberry chicken with triple berry reduction

Ingredients

4 chicken breast halves

2˝ cups Here's to the Cook! Raspberry Vinaigrette

˝ tbsp butter

1 cup Here's to the Cook! Wild Berry Jam

Cooking Steps

Place chicken breasts in baking dish and cover with 2 cups of Raspberry Vinaigrette. Marinade for at least 6 hours or overnight.

Preheat oven to 350° F and heat butter in large skillet over medium-high heat.

Place chicken breasts in skillet and sauté each side until golden brown, about 1 to 2 minutes per side. Remove chicken breasts from skillet and place in new baking dish.

To make berry reduction, remove skillet from heat and deglaze it with remaining Raspberry Vinaigrette. Add ˝ cup of Wild Berry Jam, stirring constantly. Set aside and allow reduction to cool.

Cover chicken breasts with remaining Wild Berry Jam and bake in oven for 30 minutes or until chicken is thoroughly cooked. Cut chicken lengthwise into strips (4 per piece), cover with reduction and serve.
