Steps
Preheat oven
325degrees. Toss veal with flour to coat. Heat oil in medium size
oven safe pot with tight fitting lid. Brown veal on all sides, about
1-2 minutes per side. Remove veal and set aside.
Add onions & carrots. Sauté until onions are translucent
and vegetables are fragrant, about 5 minutes. Add pesto and parsley
and combine thoroughly. Add beef broth and wine to pot, scraping
up all brown bits (this is called DEGLAZING).
Return osso buco to pot and place in center of oven. Cook 2-3 hours
or until meat is tender and flavors have combined.
