mojito roasted chicken and potatoes

Ingredients

1 whole chicken on the bone

Four medium sized potatoes

2 cups Here's To The Cook! Mojito Marinade

3 tbsp olive oil

Salt and pepper to taste

Cooking Steps

Preheat oven to 350° F and baste chicken with olive oil, salt and pepper. Place chicken in covered casserole dish.

Peal and dice potatoes, and place in casserole dish with chicken. Pour Mojito Marinade evenly over chicken and potatoes.

Cook approximately 1½ hours, basting frequently.
