Steps
Preheat oven
to 425 degrees. Place flatbread on baking sheet; brush with small
amount of olive oil. Bake until just beginning to turn color, about
3 minutes.
In a medium skillet over moderate heat, cook onions in 2 tablespoons
olive oil, stirring frequently, until deep golden in color. Spread
cilantro pesto on flatbreads; top with onions and goat cheese.
Bake until crusts are golden brown, about 10 minutes.
