brie en croute with spiced apple topping

Ingredients

¾ cup Here's to the Cook! Spiced Apple Topping

½ pkg (17.3 oz size) frozen puff pastry (1 sheet)

1 egg1 tbsp water

½ cup Craisins

¼ cup toasted almond slices

1 Brie cheese round, chilled (about 1 lb.)

Water crackers or Toasted Bread

Cooking Steps

Thaw pastry sheet at room temperature 30 minutes and preheat oven to 400 F.

Mix egg and water and set aside. Mix the Spiced Apple Topping, Craisins and almonds together and set aside.

Unfold pastry on lightly floured surface. Roll to 14" square and cut off corners to make circular (14" in diameter). Cut Brie round in half horizontally and place ½ of Brie in the center of the pastry sheet and top it with the Spiced Apple Topping mixture. Cover with remaining ½ of Brie round, cut side down. Brush edges of circle with egg mixture.

Fold two opposite sides of pastry over cheese. Trim other two sides to 2" from edge of cheese. Fold these two sides onto the round. Press edges to seal. Place seam-side down on baking sheet and decorate top with pastry scraps, if desired. Brush with egg mixture.

Bake 20 minutes or until golden. Let stand 45 minutes. Serve with crackers or toasted bread.

Serves 12.
