mushroom bruschetta |

Ingredients
1 loaf of French
or Italian bread
4 garlic cloves
1/3 cup olive oil
1 pound mushrooms (Portobello, button) chopped
½ cup Here's
to the Cook! Balsamic Vinaigrette dressing
1 tablespoon fresh parsley (optional)
½
cup parmesan cheese

Cooking
Steps
Chop garlic
very fine and add to olive oil. Slice bread into fairly thin (½
or so) pieces. Brush olive oil and garlic mixture to bread. Toast
in oven for 10 minutes at 400 degrees.
Saute mushrooms in Balsamic Vinaigrette until mushrooms are golden
brown. Add parsley (optional) and remove from heat. Partially drain
excess liquid.
Generously top bread with mushrooms. Top with cheese and bake until
cheese is melted.
